15-Minute Zucchini Tomato Pasta
Ingredients
- 1 pack pasta of your choice
- 1 tablespoon olive oil
- 1 medium zucchini, chopped
- 2 cups cherry tomatoes
- 1 cup diced tomatoes
- 1 teaspoon Tuscan seasonings
- Salt and pepper, to taste
- Fresh parsley, for serving
Preparation
Cook pasta according to the package directions.
In a large frying pan, heat olive oil over medium heat.
Add chopped zucchini and cook for 5 minutes.
Add cherry tomatoes and cook for another 5 minutes.
Drain the cooked pasta and add it to the pan.
Toss in the diced tomatoes, then add Tuscan seasonings and season with salt and pepper to taste.
Cook for an additional 5 minutes, allowing the flavors to meld.
Serve the pasta warm, garnished with fresh parsley.
