Vegan Beetroot Pesto Pasta
Ingredients
- 500g pasta of your choice
- 2 cooked beetroots
- 2 garlic cloves
- 100g walnuts
- Handful of basil
- 50g olive oil
- 1 tsp salt
- Black pepper
Optional toppings
- roasted crushed walnuts
- More fresh basil
Preparation
Cook your pasta according to the package instructions. Make sure to save the pasta water.
In a blender add the beetroots, garlic, walnuts, basil, olive oil, salt, black pepper and some pasta water (enough to blend).
Combine the pasta and sauce. Add more pasta water if necessary.
Serve with roasted walnuts and basil on top!
