Baked Cod with Sautéed Veggies: a Ukrainian Christmas Farewell
Ingredients
- 2 large white fish fillets
- 1 tbsp arrowroot flour (or regular flour)
- 1 large carrot, grated
- 1 large onion, diced
- 2 garlic cloves, minced
- 1/2 cup tomato sauce or passata
- 1/2 cup water
- 1 tsp Herbs du Provence
- Salt, pepper, chili flakes
Preparation
Pat dry the fish fillets with a paper towel.
Generously season the fish with salt, pepper, and Herbs du Provence.
Coat the fish with flour.
Fry the fish on medium-high heat with avocado oil for 3 minutes per side.
Place the fried fish into a baking dish and set it aside.
Preheat the oven to 350°F (175°C).
Sauté the diced onion for 4 minutes with a sprinkle of salt.
Add the grated carrot and continue to cook for another 4 minutes.
Add the minced garlic, tomato sauce, and water.
Let the mixture simmer for 6-8 minutes until it thickens.
Spread the sautéed veggie mixture over the fish in the baking dish.
Bake at 350°F (175°C) for 20 minutes, covered.
Uncover the dish and broil for 1 minute to get a golden finish.
