Baked Cod with Sautéed Veggies: a Ukrainian Christmas Farewell

Ingredients

  • 2 large white fish fillets
  • 1 tbsp arrowroot flour (or regular flour)
  • 1 large carrot, grated
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup tomato sauce or passata
  • 1/2 cup water
  • 1 tsp Herbs du Provence
  • Salt, pepper, chili flakes

Preparation

  1. Pat dry the fish fillets with a paper towel.

  2. Generously season the fish with salt, pepper, and Herbs du Provence.

  3. Coat the fish with flour.

  4. Fry the fish on medium-high heat with avocado oil for 3 minutes per side.

  5. Place the fried fish into a baking dish and set it aside.

  6. Preheat the oven to 350°F (175°C).

  7. Sauté the diced onion for 4 minutes with a sprinkle of salt.

  8. Add the grated carrot and continue to cook for another 4 minutes.

  9. Add the minced garlic, tomato sauce, and water.

  10. Let the mixture simmer for 6-8 minutes until it thickens.

  11. Spread the sautéed veggie mixture over the fish in the baking dish.

  12. Bake at 350°F (175°C) for 20 minutes, covered.

  13. Uncover the dish and broil for 1 minute to get a golden finish.
