Baked Miso Eggplant with Asian Toppings

Ingredients

  • 1 eggplant
  • 1 tablespoon miso paste
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon maple syrup
  • 1 clove garlic
  • Juice from 1/3 lemon

Preparation

  1. Mix all the sauce ingredients together.

  2. Pour the sauce over the eggplant and bake at 180°C for 30 minutes.

Serving suggestions

  1. Serve with plain rice, spring onions, chili, mango, sesame seeds, and coriander.
