Baked Miso Eggplant with Asian Toppings
Ingredients
- 1 eggplant
- 1 tablespoon miso paste
- 1 tablespoon sweet chili sauce
- 1 teaspoon maple syrup
- 1 clove garlic
- Juice from 1/3 lemon
Preparation
Mix all the sauce ingredients together.
Pour the sauce over the eggplant and bake at 180°C for 30 minutes.
Serving suggestions
Serve with plain rice, spring onions, chili, mango, sesame seeds, and coriander.
