Vegan Air-Fried Miso Eggplant
Ingredients
- 1 eggplant
Miso marinade
- 1 tsp miso paste
- 1 tsp soy sauce
- 1 tsp vinegar
- 1 tsp agave or maple syrup
- 1 clove garlic, minced
- 1 thumb-sized piece ginger, minced
Preparation
Cut the eggplant in quarters, then score diagonally.
Brush with oil and add some salt.
Air fry at 200°C/400°F for 10 minutes or bake at 200°C/400°F for 15-20 minutes.
Mix the miso marinade ingredients.
Use half of the marinade to brush on the eggplant.
Air fry the eggplant for another 5 minutes or bake for 5-10 more minutes.
Mix the leftover marinade with some water to make a dressing.
Serve with rice, cilantro, sesame, and optionally tofu.
