Vegan Air-Fried Miso Eggplant

Ingredients

  • 1 eggplant

Miso marinade

  • 1 tsp miso paste
  • 1 tsp soy sauce
  • 1 tsp vinegar
  • 1 tsp agave or maple syrup
  • 1 clove garlic, minced
  • 1 thumb-sized piece ginger, minced

Preparation

  1. Cut the eggplant in quarters, then score diagonally.

  2. Brush with oil and add some salt.

  3. Air fry at 200°C/400°F for 10 minutes or bake at 200°C/400°F for 15-20 minutes.

  4. Mix the miso marinade ingredients.

  5. Use half of the marinade to brush on the eggplant.

  6. Air fry the eggplant for another 5 minutes or bake for 5-10 more minutes.

  7. Mix the leftover marinade with some water to make a dressing.

  8. Serve with rice, cilantro, sesame, and optionally tofu.
