- soy sauce

Preparation
Cut the potatoes, eggplant, and bell peppers into bite-sized pieces.
Flash fry the potatoes in hot oil until golden and crispy.
Flash fry the eggplant and bell peppers separately until tender.
Prepare the sauce by mixing soy sauce, minced garlic, ginger, sugar, and vinegar in a bowl.
Toss the flash-fried vegetables with the sauce in a pan until well coated.
Serve the dish hot.
