Fried Cauliflower with Orange Sauce

Ingredients

  • 400-500 grams or 1 lbs cauliflower florets
  • A pinch of salt
  • 1/3 cup flour

Batter

  • 2/3 cup cornstarch
  • 1/3 cup all purpose flour
  • 2/3 cup sparkling water or beer
  • 1 teaspoon baking powder
  • A pinch of salt

Sauce

  • 2-3 cloves garlic, minced
  • 1 small knob ginger, about 1/2 teaspoon minced ginger
  • 1/2 teaspoon chile flakes (optional)
  • 1/2 to 1 tsp vinegar
  • 1 tablespoon + 2 teaspoons soy sauce
  • 3 tablespoons sugar
  • 3/4 to 1 cup fresh orange juice
  • 2 tablespoons cornstarch + 3 tablespoons water
  • More salt if needed
  • Oil for frying

Preparation

  1. Coat the dry cauliflower florets in 1/3 cup of flour and a pinch of salt.

  2. Heat up enough oil in a pan for an oil bath and mix all the batter ingredients, then add the floured cauliflower florets.

  3. Once the oil is hot enough, add the florets and fry until golden, then let them cool on a cooling rack. Taste some to ensure they’re cooked through.

  4. In another pan, cook the garlic and ginger in some oil for 2-3 minutes, add the sugar, chile flakes, and orange juice, and bring to a simmer. Gradually add the vinegar, soy sauce, and salt, tasting as you go.

  5. Mix the cornstarch and water, then add it to the sauce while stirring constantly to thicken.

  6. Toss the cauliflower in the sauce and serve.

Notes

  1. If using a larger cauliflower, double the sauce.

  2. Save the cauliflower leaves and stems for another dish like a stir fry.

  3. Sparkling water or beer makes a better batter than regular water.
