Miso Glazed Aubergine and Sticky Miso Noodles
Ingredients
- Aubergine
- Noodles
- Crispy onions
Sticky miso sauce
- 1 tsp miso paste
- 1 tbsp soy sauce
- 1 tbsp agave
- 1 tsp sesame oil
- 2 tbsp water
- Garlic powder
- Onion powder
Preparation
Slice the aubergine and cook until tender, either by grilling or frying
Prepare the sticky miso sauce by mixing all sauce ingredients together in a bowl
Cook the noodles according to package instructions until al dente
Toss the cooked noodles with the miso sauce to make them sticky
Glaze the cooked aubergine with some of the miso sauce
Add crispy onions on top for crunch before serving

This dish is simple to prepare and very satisfying, especially if you love soy sauce and miso flavors
Adjust the sauce to taste and experiment with different types of noodles or add more vegetables for variety
