Chickpea Tuna Stuffed Sweet Potatoes

Ingredients

  • Sweet potato
  • 1 can chickpeas
  • 1/2 nori sheet, finely chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp Apple cider vinegar
  • 1 tsp capers, finely chopped
  • 4 tbsp aioli (or cashew cream)
  • 2 tbsp dill, finely chopped
  • 1/2 tsp Sea salt
  • Pinch of black pepper

Preparation

  1. Bake the sweet potatoes in the oven until tender.

  2. In a bowl, mash the chickpeas and mix with the nori, lemon zest, lemon juice, apple cider vinegar, capers, aioli or cashew cream, dill, salt, and pepper to create the filling.

  3. Stuff the filling into the baked sweet potatoes.

  4. Serve immediately.
