Creamy Sun-Dried Tomato and Roasted Pepper Sauce
Ingredients
- 1 cup sun-dried tomatoes (marinated, drained)
- 1/4 cup kalamata olives
- 1/2 cup roasted red peppers (drained)
- 3/4 cup to 1 cup oat milk (can substitute another plant-based milk)
- 1/4 teaspoon garlic powder
- Squeeze of lemon juice
- Dash of salt and pepper to taste
- 2 tablespoons olive oil (or substitute more milk)
Preparation
Blend all ingredients in a food processor, scraping down sides as needed
Notes
This sauce is served with penne pasta, zucchini, and asparagus for a complete meal
