Crunchy Gluten-Free Sprouted Fritters

Ingredients

  • 1 head of organic broccoli
  • 1 cup shredded organic carrots (around 2 carrots)
  • 1 jar Absolute Organic Bean Sprouts, drained
  • 1 teaspoon garlic powder
  • 1 organic onion, grated
  • 1/2 teaspoon Absolute Organic Ground Black Pepper
  • 1 teaspoon sea salt
  • 1 teaspoon Absolute Organic Coconut Sugar
  • 2 organic eggs
  • 1 cup Absolute Organic Buckwheat Flour
  • 2 tablespoons organic Shallots
  • 2 tablespoons Absolute Organic Coconut Oil, to fry

Preparation

  1. Mix all ingredients together (except the coconut oil) in a bowl until well combined.

  2. Let the mixture sit for 10 minutes.

  3. Pour the coconut oil into a frying pan and heat to medium temperature.

  4. Take a tablespoon of the mixture and shape into a ball. Then flatten out to create a fritter shape.

  5. Carefully place the fritter into the hot oil. Fry each side for 2-3 minutes.

  6. Line a plate with paper towel, place the cooked fritters onto the plate to absorb any excess oil.

  7. Serve with your favourite dip and salad and enjoy.
