Easy Vegan One-Pot Quinoa Curry
Ingredients
- 2 spring onions
- 3 cloves of garlic
- 2 teaspoons cumin
- 2 teaspoons turmeric
- 3 teaspoons red curry paste
- 1 eggplant
- 1 carrot
- 1 can chopped tomatoes or passata
- 1 can coconut milk
- 3 tablespoons peanut butter
- 200g white quinoa
- 1 handful spinach
Preparation
Cook finely chopped spring onions and garlic in a sauté pan or skillet.
Add the spices and cook for a few minutes at high heat, then add the red curry paste.
Add the chopped eggplant, carrots, and one can of tomatoes.
Pour in the coconut milk, peanut butter, and white quinoa and cook for 15 minutes while stirring until the quinoa is cooked.
A few minutes before serving, add one handful of fresh spinach.
Taste and season with fresh lime, salt, and pepper.

Serve with naan bread, vegan creme fraiche, and pomegranate seeds.
