Easy Vegan Scallion Oil Noodles

Ingredients

  • 2 bundles (65g each) dry wheat noodles or other noodles of choice
  • More chopped scallions, for topping
  • Veggies and mushrooms of choice, optional
  • Salt, to taste

Scallion oil

  • 1/4 cup olive oil, you can also use other oil like rice bran, canola, sesame
  • 3/4 cup chopped scallions (around 5 stalks) - 1/4 cup of the white part + 1/2 cup of the green part
  • 2-3 tsp soy sauce*
  • 2 tsp sugar
  • 1 tsp mushroom/dark soy sauce for colour (optional but highly recommended!)
  • 1/2 tsp sesame seeds

Preparation

  1. If using veggies and mushrooms, sauté them in a pan with some oil until cooked, then season with salt to taste and set aside or mix with noodles later.

  2. Heat a pot of water until it boils, then add the noodles and cook until chewy, and drain the water.

  3. While the noodles are cooking, heat a pan and add 1/4 cup oil over medium low heat.

  4. Add the white chopped scallions and cook on low heat for 3-4 minutes or until lightly brown, so as not to burn them.

  5. Add the green part of the scallions, mix well, and cook for another 3-4 minutes until lightly brown.

  6. Add the sesame seeds and mix.

  7. Add the cooked noodles to the scallion oil.

  8. In a small bowl, mix soy sauce and sugar until the sugar is diluted.

  9. Add this mixture to the noodles and mix well.

  10. Add more soy sauce to taste if desired.

  11. If using, add dark soy sauce for colour.

  12. Mix well and cook for a few more minutes.

  13. Enjoy while hot!
