Easy Veggie Pasta with Fresh Vegetables

Ingredients

  • 1 package Barilla pasta
  • 2 cups chopped cherry tomatoes
  • 2 cups chopped mushrooms
  • 1/2 onion
  • 2 cloves garlic
  • 1 zucchini
  • 1 yellow squash
  • 2 tbsp olive oil
  • 1 cup vegetable broth
  • 1/4 cup pesto
  • 1 cup pasta sauce
  • salt and pepper to taste

Preparation

  1. Cook pasta according to the package instructions.

  2. Slice your onions and garlic.

  3. Bring a pan to medium heat, add the olive oil, onion, and garlic and cook for about 5 minutes.

  4. In the meantime, chop your tomatoes, mushrooms, zucchini, and squash.

  5. Add them to the pan and add vegetable broth as needed so that the veggies don't stick to the pan. Cook for about 10-15 minutes.

  6. When the veggies have cooked, add the pesto and pasta sauce and cook for about another 1-2 minutes.

  7. Then add your pasta to your sauce and enjoy.
