herby thyme potato tart
Ingredients
- 6-8 potatoes
- 6 mushrooms
- 1 pack puff pastry
- 1/2 leek
- 2 onions
- 200g smoked tofu
- Oliveoil
- 1 pot plantbased creme fraiche
- 2tb nutritional yeast
- salt, pepper
- Thyme
Preparation
Preheat oven on 220° C circulating air
Cook your potatoes
Chop the potatoes in pieces
Cut mushrooms in slices
Cut leek and onion in small pieces
Sauté in oil and then set aside
Dry the tofu with kitchen paper then chop into cubes
Heat up oil in a pan
Cook tofu cubes crispy and deglaze with soy sauce
Mix creme fraiche and nutritional yeast with salt, pepper and thyme
Put the puff pastry on a baking tray lined with baking paper
Put creme fraiche on top and then sprinkle the tofu cubes, potatoes, mushrooms and onions on top
Bake for 15 minutes
