Asparagus Mushroom Tarte

Ingredients

  • 1 pack puff pastry⁣
  • 5 green asparagus ⁣
  • 8 mushrooms ⁣
  • 1/2 leek⁣
  • 2 onions⁣
  • 200g smoked tofu⁣
  • olive oil ⁣
  • 1 pot plant based creme fraiche⁣
  • 2tb nutritional yeast⁣

Preparation

  1. Preheat oven to 220 degrees circulating air ⁣

  2. Chop leek and onion in small pieces ⁣

  3. Sauté in oil and then set aside⁣

  4. Dry the tofu with kitchen paper then chop into cubes ⁣

  5. Heat up oil in a pan ⁣

  6. Cook tofu cubes till they’re crispy ⁣

  7. Add the chopped mushrooms and asparagus⁣

  8. Deglaze with soy sauce ⁣

  9. Mix creme fraiche and nutritional yeast with salt, pepper and nutmeg⁣

  10. Put puff pastry on a baking tray lined with baking paper⁣

  11. Spread Creme Fraiche and sprinkle the mix on top

  12. Bake for 15 minutes on the bottom rail of the oven⁣
