Asparagus Mushroom Tarte
Ingredients
- 1 pack puff pastry
- 5 green asparagus
- 8 mushrooms
- 1/2 leek
- 2 onions
- 200g smoked tofu
- olive oil
- 1 pot plant based creme fraiche
- 2tb nutritional yeast
Preparation
Preheat oven to 220 degrees circulating air
Chop leek and onion in small pieces
Sauté in oil and then set aside
Dry the tofu with kitchen paper then chop into cubes
Heat up oil in a pan
Cook tofu cubes till they’re crispy
Add the chopped mushrooms and asparagus
Deglaze with soy sauce
Mix creme fraiche and nutritional yeast with salt, pepper and nutmeg
Put puff pastry on a baking tray lined with baking paper
Spread Creme Fraiche and sprinkle the mix on top
Bake for 15 minutes on the bottom rail of the oven
