Gluten Free Waffles

Ingredients

  • 1 cup oat flour⁣⁣⁣ (add an extra 2 tablespoons if making these vegan)
  • 3 t coconut flour ⁣⁣⁣
  • 1 1/2 t baking powder ⁣⁣⁣
  • dash salt⁣⁣⁣
  • 2 flax eggs (2 t flax meal + 1/4 cup warm water)⁣⁣
  • 3/4 cup soy milk
  • 1 t vanilla⁣⁣⁣
  • 1 t agave, or any sweetener⁣⁣⁣
  • 1/4 cup coconut oil, melted and cooled ⁣⁣⁣

Preparation

  1. Preheat oven to its lowest temperature.⁣⁣⁣

  2. If you are making vegan waffles, begin soaking your flax + water mixture now.⁣⁣

  3. Melt coconut oil and set aside.⁣⁣⁣

  4. Combine dry ingredients in small bowl and set aside.⁣⁣⁣

  5. Whisk wet ingredients together EXCEPT for coconut oil. Fold in dry ingredients half way, add coconut oil, and continue to fold until smooth and combined. ⁣⁣⁣

  6. Allow batter to set and absorb some liquid while you heat your waffle iron. ⁣⁣⁣

  7. Grease waffle iron (very well) on top and bottom before adding batter. Add batter and cook for about 5-7 minutes until golden brown. ⁣⁣⁣

  8. Place directly on oven rack to continue heating as you cook the rest of the batter, this will also help crisp the waffle. ⁣⁣⁣

  9. Serve when all are done!⁣⁣⁣
