Vegan Apple Cake Loaf
Ingredients
Dough
- 1 cup oat flour
- 1 cup regular flour
- 1/3 cup coconut flour
- 2/3 cup spelt flour
- 2/3 cup plant milk
- 1/3 cup almond yogurt (vegan)
- 2 tbsp maple syrup
- 2 tbsp instant yeast
- 2 tsp coconut oil
- a pinch of salt
Filling
- 1 apple
- 2 tbsp cinnamon
- 3 tbsp sugar (coconut)
- 2 tbsp water
- 2 tsp coconut oil
Preparation
Mix all dry dough ingredients in a bowl.
Heat milk on the stove until lukewarm.
Add all other dough ingredients along with the heated milk.
Knead the dough by hand or using a kitchen baking machine.
Leave the dough to rise (cover the bowl with plastic + a kitchen towel) in a warm place for an hour or until doubled.
Meanwhile, make the filling
Peel & cut the apple into small pieces.
Add apple to a saucepan with cinnamon, sugar, water, and coconut oil.
Cook on medium heat for about 10 minutes or until the apple is soft and thick.
Transfer the risen dough to a bread tin and let it rise for another 30-60 minutes.
Pour the filling on top of the dough, spread it out evenly, and let it rise for another 30 minutes.
Bake at 190°C (375°F) for 45-50 minutes.
Let the cake cool before serving.
