Vegan Apple Cake Loaf

Ingredients

Dough

  • 1 cup oat flour
  • 1 cup regular flour
  • 1/3 cup coconut flour
  • 2/3 cup spelt flour
  • 2/3 cup plant milk
  • 1/3 cup almond yogurt (vegan)
  • 2 tbsp maple syrup
  • 2 tbsp instant yeast
  • 2 tsp coconut oil
  • a pinch of salt

Filling

  • 1 apple
  • 2 tbsp cinnamon
  • 3 tbsp sugar (coconut)
  • 2 tbsp water
  • 2 tsp coconut oil

Preparation

  1. Mix all dry dough ingredients in a bowl.

  2. Heat milk on the stove until lukewarm.

  3. Add all other dough ingredients along with the heated milk.

  4. Knead the dough by hand or using a kitchen baking machine.

  5. Leave the dough to rise (cover the bowl with plastic + a kitchen towel) in a warm place for an hour or until doubled.

Meanwhile, make the filling

  1. Peel & cut the apple into small pieces.

  2. Add apple to a saucepan with cinnamon, sugar, water, and coconut oil.

  3. Cook on medium heat for about 10 minutes or until the apple is soft and thick.

  1. Transfer the risen dough to a bread tin and let it rise for another 30-60 minutes.

  2. Pour the filling on top of the dough, spread it out evenly, and let it rise for another 30 minutes.

  3. Bake at 190°C (375°F) for 45-50 minutes.

  4. Let the cake cool before serving.
