Crispy Gluten-Free Waffles

Ingredients

  • 1 1/2 cups gluten-free oat flour
  • 1/2 cup blanched almond flour
  • 1/4 cup chickpea flour
  • 1/2 cup cornmeal
  • 1 T ground chia or flax seeds
  • 1 T baking powder
  • Pinch of sea salt
  • 2 1/2 cups almond milk
  • 2 teaspoons vanilla extract
  • 3 T date paste or maple syrup

Preparation

  1. Mix the dry ingredients in a large bowl: gluten-free oat flour, blanched almond flour, chickpea flour, cornmeal, ground chia or flax seeds, baking powder, and a pinch of sea salt.

  2. Make a well in the center of the dry ingredients and add almond milk, vanilla extract, and date paste or maple syrup.

  3. Mix until well combined.

  4. Follow your waffle maker's instructions, using about 1/2 cup batter per waffle.

  5. Cook until crispy and golden brown.
