Flavorful Mushroom Jam on Toast

Ingredients

  • 180g white or chestnut mushrooms
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 white onion, diced
  • 3 tablespoons maple syrup
  • 1 tablespoon balsamic glaze
  • 1 tablespoon miso paste
  • 1 small shot of espresso or 1 tsp coffee granules with 2 tbsp water
  • 1/2 red chili, diced

Preparation

  1. Wash the mushrooms well and dice them finely. Dice the onions and mince the garlic.

  2. Heat the oil in a pan over medium heat. Add the onions with a pinch of salt and cook for 10 minutes until softened and sweeter. Add a splash of water if it starts to stick.

  3. Add the minced garlic, diced chili, and mushrooms to the pan. Cook for 3 minutes, mixing everything together.

  4. Stir in the maple syrup, balsamic glaze, espresso (or coffee mixture), and miso paste. Mix well and cook for another 3 minutes on medium heat. Season with salt and pepper to taste.

  5. Once most of the liquid has evaporated, set the mixture aside and allow it to cool for 10 minutes. It will thicken up further as it cools.

  6. Serve the mushroom jam on toasted sourdough bread and enjoy.
