Buttered Mushroom and Mashed Avocado Toast
Ingredients
- 2 cups sliced mushrooms
- 1 tablespoon dairy-free butter
- 1 tablespoon olive oil
- 1/4 cup vegetable stock
- 2 garlic cloves, minced
- 1/2 teaspoon rosemary
- Salt and pepper, to taste
- 1 avocado, mashed
- 2 slices of sourdough bread
- Hemp seeds and pumpkin seeds, for garnishing
Preparation
In a pan over medium heat, add mushrooms, dairy-free butter, and olive oil. Cook for 5 minutes until the butter has melted.
Add vegetable stock, minced garlic, rosemary, salt, and pepper to taste. Cook for 10 minutes until the mushrooms are golden brown.
Toast the slices of sourdough bread.
Spread mashed avocado onto the toasted bread slices.
Top the avocado with the cooked mushrooms.
Sprinkle with hemp seeds and pumpkin seeds for garnishing.
Serve and enjoy right away.
