Mango Coconut Lassi Gummies
Ingredients
Coconut layer
- 1 1/4 cup canned coconut milk
- 2 tbsp honey or maple syrup (adjust to taste)
- 2 tbsp gelatin
- 1/2 tsp vanilla extract or a pinch of cardamom (optional)
Mango layer
- 1/2 cup mango puree (blend ripe mango or thawed frozen mango)
- 3/4 cup coconut milk
- 2 tbsp honey or maple syrup (optional)
- 2 tbsp grass-fed gelatin
Preparation
In a small pot, bloom 2 tbsp gelatin by sprinkling it over 1/4 cup coconut milk and let it sit for 3–5 minutes. Gently warm the rest of the coconut milk, honey, and vanilla until smooth. Whisk in the bloomed gelatin until fully dissolved (don’t boil). Pour into a square or rectangular container. Refrigerate for 20–30 minutes until set.
Blend mango puree with 2 tbsp coconut milk and honey until silky. Bloom 2 tbsp gelatin in mixture as before. Warm gently until dissolved. Let mango mixture cool slightly (but not harden) so it won’t melt the coconut layer.
Once the coconut layer is set, gently pour the mango mixture over it. Refrigerate again for at least 2–3 hours until fully set.
Slice into squares or cubes. Store in an airtight container in the fridge for up to 5 days.
