No-Bake Chocolate Berry Tart
Ingredients
Base
- 150g dates
- 1 cup desiccated coconut
- 1 cup almond flour
- 3 tbsp water
- 3 tbsp melted coconut oil
- 3 tsp raw cacao powder
Berry layer
- 250g frozen mixed berries
- 2 tbsp chia seeds
- 1 tsp agar agar powder
Chocolate layer
- 1 can coconut milk
- 200g almond butter
- 2 tbsp raw cacao powder
- 1/2 bar dark chocolate (melted)
- 1 tbsp sweetener
- 1 tsp agar agar powder
Preparation
Soak dates in hot water for about 20 minutes.
Blend the dates until smooth.
Add about 3 tablespoons of the soaking water and blend again.
Combine the date paste with the remaining base ingredients and press the mixture into a lined tart form.
Keep in the freezer while preparing the berry layer.
Put berries and agar agar powder in a saucepan and heat until dissolved.
Bring to a boil, add chia seeds, and cook for a few more minutes.
Pour the berry mixture onto the base and refrigerate while making the final layer.
Melt almond butter in a saucepan.
Pour in coconut milk, add melted dark chocolate and cacao powder, and mix well.
Allow the mixture to cool to room temperature.
Add agar agar powder and sweetener, then bring to a boil.
Cook for about 10 minutes while stirring constantly.
Pour the mixture over the berry layer and refrigerate for at least 2 hours, preferably overnight.
Decorate with shaved chocolate and raspberries.
