Pad Thai with Fresh Vegetables

Ingredients

  • 1 wok vegetable mix
  • 1 handful cilantro
  • 100g rice noodles
  • 1 garlic clove
  • 2 tablespoons roasted peanuts
  • 2 eggs
  • 6 tablespoons soy sauce

Optional proteins

  • Tofu
  • Chicken
  • Shrimp

Preparation

  1. Cook rice noodles until soft.

  2. Press garlic and sauté with the vegetable mix in a pan with oil.

  3. Deglaze with soy sauce and stir in eggs until they set.

  4. Mix in peanuts and sprinkle with freshly chopped cilantro.

  5. Salt to taste.
