Pasta with Crispy Tofu
Ingredients
Crispy tofu
- 3 tbsp olive oil
- 1 10 oz block tofu
- 1/4 cup cornstarch
- 2 tbsp tamari
Pasta
- 3 cups pasta of your choice
- 1 medium onion
- 1 can coconut milk
- 1 tsp garlic powder
- 1/2 tsp salt, or to taste
- Juice of 1/2 lemon
- 1 tbsp cornstarch
Preparation
Cut the tofu into cubes.
Heat the olive oil in a pan or skillet.
Coat the tofu cubes in cornstarch and add them to the pan or skillet.
Cook for 8-10 minutes, rotating frequently, until golden brown on all sides.
At the last minute, add the tamari and mix to make sure the tofu is evenly coated.
Cook the pasta according to packaging instructions.
Meanwhile, dice the onion.
Cook the onion for 3-4 minutes until it softens.
Add the coconut milk, garlic powder, salt, and lemon juice.
Stir together, then add the cooked and drained pasta and cornstarch.
Continue to stir until the sauce thickens.
Combine the crispy tofu with the pasta mixture and serve.
