Red Lentil Dahl

Ingredients

  • 1 onion, chopped
  • 2 cloves of garlic, finely sliced
  • 1 red pepper, finely sliced
  • olive oil
  • 1 tsp curry powder
  • 1 tsp cinnamon
  • 1/2 tsp turmeric
  • 1 inch fresh ginger, finely sliced
  • 200g red lentils
  • 1 tin chopped tomatoes
  • 1 tin coconut milk
  • juice of 1/2 a lime
  • handful of fresh spinach
  • pinch of salt and pepper

Preparation

  1. Add the oil, onion, garlic and ginger to a frying pan on a medium heat and cook for three minutes . Add the spices and the red pepper and cook for a further three minutes until the spices are fragrant and the onion is soft. Add more oil or a splash of water if the spices stick to the pan

  2. Add the tomatoes, lentils and coconut milk and simmer for 10 minutes on a medium heat

  3. Keep stirring occasionally to ensure the lentils don’t stick to the pan. Add a splash of water if they do

  4. Add the spinach and lime juice

  5. Season the grow up version before serving
