Red Lentil Dahl
Ingredients
- 1 onion, chopped
- 2 cloves of garlic, finely sliced
- 1 red pepper, finely sliced
- olive oil
- 1 tsp curry powder
- 1 tsp cinnamon
- 1/2 tsp turmeric
- 1 inch fresh ginger, finely sliced
- 200g red lentils
- 1 tin chopped tomatoes
- 1 tin coconut milk
- juice of 1/2 a lime
- handful of fresh spinach
- pinch of salt and pepper
Preparation
Add the oil, onion, garlic and ginger to a frying pan on a medium heat and cook for three minutes . Add the spices and the red pepper and cook for a further three minutes until the spices are fragrant and the onion is soft. Add more oil or a splash of water if the spices stick to the pan
Add the tomatoes, lentils and coconut milk and simmer for 10 minutes on a medium heat
Keep stirring occasionally to ensure the lentils don’t stick to the pan. Add a splash of water if they do
Add the spinach and lime juice
Season the grow up version before serving
