Creamy Coconut Tofu Dahl
Ingredients
- 1/2 an onion, finely chopped
- 1 clove of garlic, minced
- 1/4 tsp each: cumin, curry powder, paprika, chilli powder, turmeric, chilli flakes
- few curry leaves
- 1/2 tsp fresh ginger
- 1 medium tomato, chopped
- 1 tbsp tomato puree
- 100g dry lentils, washed + drained
- 1/2 a can of coconut milk
- veg stock
- tofu, chopped
Preparation
Sauté onion + garlic until soft
Add in spices + curry leaves + ginger + tomato + purée + cook 3 mins
Stir in the lentils + coconut milk
Bring to boil, then simmer for 1 hour until thick, stirring every 15 mins (if it dries out add a splash of veg stock or water)
Stir in the tofu n serve
