Creamy Coconut Tofu Dahl

Ingredients

  • 1/2 an onion, finely chopped
  • 1 clove of garlic, minced
  • 1/4 tsp each: cumin, curry powder, paprika, chilli powder, turmeric, chilli flakes
  • few curry leaves
  • 1/2 tsp fresh ginger
  • 1 medium tomato, chopped
  • 1 tbsp tomato puree
  • 100g dry lentils, washed + drained
  • 1/2 a can of coconut milk
  • veg stock
  • tofu, chopped

Preparation

  1. Sauté onion + garlic until soft

  2. Add in spices + curry leaves + ginger + tomato + purée + cook 3 mins

  3. Stir in the lentils + coconut milk

  4. Bring to boil, then simmer for 1 hour until thick, stirring every 15 mins (if it dries out add a splash of veg stock or water)

  5. Stir in the tofu n serve
