Sautéed Miso Cabbage and Tofu
Ingredients
- 1/4 of a medium cabbage, shredded
- 1 small onion
- 1 block extra firm tofu, pressed and drained
- 1 stalk celery
- 1 small carrot, sliced into coins
- 1 inch ginger minced
- 3 cloves garlic minced
- 2 tbsp low sodium soy sauce
- 2 tsp garlic chili sauce
- 2 tsp maple syrup
- 1 tsp miso paste
- 2 tbsp water
- 1/4 tsp black pepper
- Extra Veggies of choice: I use bell pepper, collards and parsley
Preparation
Cube tofu and place to the side
In a small bowl, whisk together miso and water then set aside
In a sauté pan, add onions and celery and sauté until onions are softened
Add in carrots, cabbage, garlic and ginger and sauté until fragrant
Add in soy sauce, garlic chili sauce and maple syrup and stir to coat
Add in remaining veggies and miso mixture
Stir and cook for a minute or until miso absorbs into the stir fry
Serve and enjoy
