Tofu and Cauliflower Rice Stir Fry
Ingredients
- Firm tofu
- Cauliflower (for rice)
- 1 onion
- Garlic cloves
- Bell peppers
- Dried chile de árbol
- Onion powder
- Garlic powder
- Black pepper
- Kikkoman low sodium soy sauce to taste
- 1 tablespoon maple syrup
- Water
Preparation
Prepare cauliflower rice by pulsing cauliflower florets in a food processor until rice-like consistency, or use pre-riced cauliflower
Press tofu to remove excess water, then cut into bite-sized cubes
Chop onion, garlic, and bell peppers into small pieces
Heat oil in a large skillet or wok over high heat
Add chopped onion and garlic, stir fry for 1-2 minutes until fragrant
Add bell peppers, dried chile de árbol, and tofu cubes, stir fry for 5-7 minutes until vegetables are tender and tofu is lightly browned
In a small bowl, mix soy sauce, maple syrup, onion powder, garlic powder, black pepper, and a splash of water to create a sauce
Pour the sauce over the stir fry mixture and cook for an additional 2-3 minutes, stirring to coat evenly
Serve the tofu stir fry with the prepared cauliflower rice
