Shortcut Italian Wedding Soup
Ingredients
- 1 pack of Italian hot sausage
- 3/4 cup small noodles like acini de pepe
- 3/4 cup diced carrots
- 3/4 cup diced onion
- 3/4 cup diced celery
- 3 garlic cloves
- 1 tbsp Italian seasoning
- 4 cups broth
- 2 cups of water
- 2-3 handfuls of spinach
Preparation
Remove sausage from casing and roll into small balls.
Heat a large Dutch oven or pot and brown sausage meatballs for 2 minutes per side.
Remove and set aside.
Add a splash of olive oil and add onions, celery, and carrots; sauté for 5 minutes.
Add garlic, Italian seasoning, salt, and pepper.
Add pasta, broth, water, and sausage.
Bring to a boil and simmer for 10 minutes.
Stir in spinach.
Serving suggestions
Optionally, serve with shredded parmesan.
