Shortcut Italian Wedding Soup

Ingredients

  • 1 pack of Italian hot sausage
  • 3/4 cup small noodles like acini de pepe
  • 3/4 cup diced carrots
  • 3/4 cup diced onion
  • 3/4 cup diced celery
  • 3 garlic cloves
  • 1 tbsp Italian seasoning
  • 4 cups broth
  • 2 cups of water
  • 2-3 handfuls of spinach

Preparation

  1. Remove sausage from casing and roll into small balls.

  2. Heat a large Dutch oven or pot and brown sausage meatballs for 2 minutes per side.

  3. Remove and set aside.

  4. Add a splash of olive oil and add onions, celery, and carrots; sauté for 5 minutes.

  5. Add garlic, Italian seasoning, salt, and pepper.

  6. Add pasta, broth, water, and sausage.

  7. Bring to a boil and simmer for 10 minutes.

  8. Stir in spinach.

Serving suggestions

  1. Optionally, serve with shredded parmesan.
