Strawberry Pesto Pasta Salad
Ingredients
- 12 ounces pasta of choice (I used banza)
- 2 cups greens (spinach, arugula, or mixed greens)
- 1 cup diced strawberries
- 1 cup blackberries
- 1 avocado, diced
- 8 ounces fresh mozzarella balls
- 1/3 cup pesto of choice
- fresh basil
- Kosher salt and fresh ground black pepper to taste
- 1-2 tbsp honey
Preparation
Cook the pasta according to package instructions. Drain and rinse the pasta under cold water. Add to a large bowl.
Add the greens, strawberries, blackberries, avocado, mozzarella balls, and pesto to the pasta.
Stir and drizzle the honey on top and toss. Add salt and pepper to taste.
Add fresh basil for garnish.
Serve and enjoy.
