Sweet and Savory Charcuterie Snack Board

Ingredients

  • Grapes
  • Grapefruit
  • Tomatoes
  • Carrot sticks
  • Artisan bread
  • Crackers
  • Chopped walnuts
  • Dark chocolate

Roasted red pepper dip

  • 2 red bell peppers
  • 1 cup grape tomatoes
  • 4 cloves garlic
  • 1/2 cup walnuts
  • Juice from 1/2 lemon
  • 1 teaspoon olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Preparation

Board assembly

  1. Arrange all the ingredients on a large board or platter to create the charcuterie snack board.

Roasted red pepper dip

  1. Preheat the oven to 425F.

  2. Add bell peppers, tomatoes, and garlic to a baking sheet.

  3. Toss in a drizzle of olive oil and a pinch of flaky sea salt.

  4. Roast for 15 to 17 minutes or until bell pepper is charred and tomatoes are blistered.

  5. Deseed bell pepper and roughly chop.

  6. Add to a food processor along with tomatoes and garlic flesh, removing the skin.

  7. Toast walnuts at 325F for 8 minutes until fragrant and golden brown.

  8. Add toasted walnuts, lemon juice, olive oil, and paprika to the food processor.

  9. Process until smooth and creamy.

  10. Add salt and pepper to taste and process to combine.
