Sweets and Greens Nourish Bowl

Ingredients

  • 3 C baby spinach
  • 1 small sweet potato
  • 1/2 C cherry tomatoes
  • 1/2 avocado, sliced
  • 2 C fresh greens
  • 1 TBSP hemp seed
  • microgreens
  • 1/2 lemon, juiced
  • salt and pepper, to taste
  • crushed red pepper

Preparation

  1. Add spinach to a small sauce pan with 1/4 C water and steam until tender.

  2. Wash sweet potato and puncture a few times with a fork. Bake if desired, but for a super easy short cut, wrap in a damp paper towel and microwave for 5-6 minutes. Cut in half.

  3. Drain spinach and add to bowl with fresh greens, sweet potato, avocado, and tomato. Top with a squeeze of lemon juice, salt, pepper, crushed red pepper, and microgreens. Two other options: add a drizzle of balsamic reduction or hot sauce of choice. YUM - Enjoy!
