Sweets and Greens Nourish Bowl
Ingredients
- 3 C baby spinach
- 1 small sweet potato
- 1/2 C cherry tomatoes
- 1/2 avocado, sliced
- 2 C fresh greens
- 1 TBSP hemp seed
- microgreens
- 1/2 lemon, juiced
- salt and pepper, to taste
- crushed red pepper
Preparation
Add spinach to a small sauce pan with 1/4 C water and steam until tender.
Wash sweet potato and puncture a few times with a fork. Bake if desired, but for a super easy short cut, wrap in a damp paper towel and microwave for 5-6 minutes. Cut in half.
Drain spinach and add to bowl with fresh greens, sweet potato, avocado, and tomato. Top with a squeeze of lemon juice, salt, pepper, crushed red pepper, and microgreens. Two other options: add a drizzle of balsamic reduction or hot sauce of choice. YUM - Enjoy!
