Ultimate Indian Kitchari Comfort Food Dish

Ingredients

  • 150gms split moong daal
  • 150gms basmati rice
  • 150gms vegetables of choice
  • Large knob butter or ghee and more to serve
  • 5-6 cups of water
  • 5 curry leaves
  • 1/2 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 small stick cinnamon
  • coriander to serve
  • Salt to taste
  • Optional: a little ginger

Preparation

  1. Melt the ghee or butter in a heavy pan (use oil if vegan) on a low heat, add all the spices and stir for about 30 seconds, be careful not to burn them

  2. Next add the daal, rice and 5 cups of boiling water

  3. Cover and simmer for 20 minutes

  4. Stir in the chopped vegetables and add 1/2 to 1 cup more hot water

  5. Cover and simmer for a further 10 minutes

  6. Serve with a large knob of butter or ghee
