Vegan Cauliflower Steak with Chimichurri

Ingredients

  • 1 small head cauliflower

Chimichurri

  • 2 cups packed fresh parsley
  • 4 cloves garlic crushed
  • 1 shallot
  • 1 chilli pepper finely diced
  • the juice from 1/2 lemon
  • 1/4 cup red wine vinegar
  • 2/3 cup extra virgin olive oil
  • 1/4 tsp salt
  • 2 tbsp fresh oregano

Preparation

  1. Prepare the chimichurri by combining all chimichurri ingredients in a bowl and mixing well; let it sit for flavors to meld

  2. Cut the cauliflower head into 1-inch thick steaks

  3. Brush the cauliflower steaks with oil and season with salt and pepper

  4. Roast the cauliflower in a preheated oven at 400°F for 20-25 minutes until tender and browned, or grill over medium heat until charred

  5. Serve the cauliflower steaks topped with the chimichurri sauce
