Vegan Cauliflower Steak with Chimichurri
Ingredients
- 1 small head cauliflower
Chimichurri
- 2 cups packed fresh parsley
- 4 cloves garlic crushed
- 1 shallot
- 1 chilli pepper finely diced
- the juice from 1/2 lemon
- 1/4 cup red wine vinegar
- 2/3 cup extra virgin olive oil
- 1/4 tsp salt
- 2 tbsp fresh oregano
Preparation
Prepare the chimichurri by combining all chimichurri ingredients in a bowl and mixing well; let it sit for flavors to meld
Cut the cauliflower head into 1-inch thick steaks
Brush the cauliflower steaks with oil and season with salt and pepper
Roast the cauliflower in a preheated oven at 400°F for 20-25 minutes until tender and browned, or grill over medium heat until charred
Serve the cauliflower steaks topped with the chimichurri sauce
