Cauliflower Steak with Chimichurri
Ingredients
- 1 small head cauliflower
Chimichurri
- 2 cups packed fresh parsley
- 4 cloves garlic crushed
- 1 shallot
- 1 chilli pepper finely diced
- the juice from 1/2 lemon
- 1/4 cup red wine vinegar
- 2/3 cup extra virgin olive oil
- 1/4 tsp salt
- 2 tbsp fresh oregano
Preparation
Mix all chimichurri ingredients together in a bowl and set aside.
Slice the cauliflower head into 1-inch thick steaks.
Season the cauliflower steaks with salt and pepper if desired.
Cook the cauliflower steaks by roasting in a preheated oven at 400°F for 20-25 minutes or grilling until tender and browned.
Serve the cauliflower steaks topped with the chimichurri sauce.
