Cauliflower Steak with Chimichurri

Ingredients

  • 1 small head cauliflower

Chimichurri

  • 2 cups packed fresh parsley
  • 4 cloves garlic crushed
  • 1 shallot
  • 1 chilli pepper finely diced
  • the juice from 1/2 lemon
  • 1/4 cup red wine vinegar
  • 2/3 cup extra virgin olive oil
  • 1/4 tsp salt
  • 2 tbsp fresh oregano

Preparation

  1. Mix all chimichurri ingredients together in a bowl and set aside.

  2. Slice the cauliflower head into 1-inch thick steaks.

  3. Season the cauliflower steaks with salt and pepper if desired.

  4. Cook the cauliflower steaks by roasting in a preheated oven at 400°F for 20-25 minutes or grilling until tender and browned.

  5. Serve the cauliflower steaks topped with the chimichurri sauce.
