Cauliflower Steak with Chimichurri

Ingredients

  • 1 small head cauliflower

Chimichurri sauce

  • 2 cups packed fresh parsley
  • 4 cloves garlic, crushed
  • 1 shallot
  • 1 chilli pepper, finely diced
  • juice from 1/2 lemon
  • 1/4 cup red wine vinegar
  • 2/3 cup extra virgin olive oil
  • 1/4 tsp salt
  • 2 tbsp fresh oregano

Preparation

  1. Preheat oven to 400°F

  2. Cut the cauliflower into 1-inch thick steaks

  3. Brush both sides of the cauliflower steaks with olive oil and season with salt and pepper

  4. Place on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and browned

  5. Meanwhile, combine all chimichurri ingredients in a bowl and mix well

  6. Serve the cauliflower steaks topped with chimichurri sauce
