Cauliflower Steak with Chimichurri
Ingredients
- 1 small head cauliflower
Chimichurri sauce
- 2 cups packed fresh parsley
- 4 cloves garlic, crushed
- 1 shallot
- 1 chilli pepper, finely diced
- juice from 1/2 lemon
- 1/4 cup red wine vinegar
- 2/3 cup extra virgin olive oil
- 1/4 tsp salt
- 2 tbsp fresh oregano
Preparation
Preheat oven to 400°F
Cut the cauliflower into 1-inch thick steaks
Brush both sides of the cauliflower steaks with olive oil and season with salt and pepper
Place on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and browned
Meanwhile, combine all chimichurri ingredients in a bowl and mix well
Serve the cauliflower steaks topped with chimichurri sauce
