Vegan Cinnamon Oatmeal Pancakes

Ingredients

  • 1 cup oats
  • 2 tbs desiccated coconut
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tsp vanilla bean paste
  • 3 tbs applesauce/mashed banana
  • 1/2 an apple, grated

Preparation

  1. Blend all ingredients except for the grated apple until you get a smooth batter

  2. Fold in the apple and let it sit for 10 minutes

  3. Grease a pan well and cook in about 1/4 cup portions, flipping when bubbles appear and the edges turn opaque
