Vegan Jackfruit Curry

Ingredients

  • 1 can of young green jackfruit
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 1 red bell pepper, sliced
  • 1 can of coconut milk
  • 2 tablespoons of red curry paste
  • 1 tablespoon of soy sauce
  • 1 tablespoon of maple syrup
  • 1 tablespoon of lime juice
  • Fresh cilantro for garnish
  • Cooked rice or naan bread for serving

Preparation

  1. Sauté the chopped onion, minced garlic, and grated ginger in a pan until softened and fragrant.

  2. Add the sliced red bell pepper and jackfruit; cook for a few minutes.

  3. Stir in the red curry paste and cook briefly to enhance flavors.

  4. Pour in the coconut milk, soy sauce, maple syrup, and lime juice; mix well.

  5. Simmer the mixture until the jackfruit is tender and the sauce thickens.

  6. Garnish with fresh cilantro before serving with rice or naan bread.
