Vegan Jackfruit Curry
Ingredients
- 1 can of young green jackfruit
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 thumb-sized piece of ginger, grated
- 1 red bell pepper, sliced
- 1 can of coconut milk
- 2 tablespoons of red curry paste
- 1 tablespoon of soy sauce
- 1 tablespoon of maple syrup
- 1 tablespoon of lime juice
- Fresh cilantro for garnish
- Cooked rice or naan bread for serving
Preparation
Sauté the chopped onion, minced garlic, and grated ginger in a pan until softened and fragrant.
Add the sliced red bell pepper and jackfruit; cook for a few minutes.
Stir in the red curry paste and cook briefly to enhance flavors.
Pour in the coconut milk, soy sauce, maple syrup, and lime juice; mix well.
Simmer the mixture until the jackfruit is tender and the sauce thickens.
Garnish with fresh cilantro before serving with rice or naan bread.
