Lentil Taco Meat Filling

Ingredients

  • 4 cups cooked green lentils
  • 1/2 cup vegetable broth
  • 2 tbsp soy sauce, low sodium
  • 1 can of diced fire roasted tomatoes with green chiles
  • 4 garlic cloves, minced
  • 1/2 cup diced onion
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 3-4 chipotles in adobo sauce, diced
  • 1 tbsp maple syrup or brown sugar
  • 2 tbsp lime juice

Preparation

  1. Sauté diced onion and minced garlic in a skillet until softened

  2. Add chili powder, cumin, and diced chipotles in adobo sauce, cook for about one minute

  3. Stir in cooked green lentils, diced fire roasted tomatoes with green chiles, vegetable broth, soy sauce, and maple syrup or brown sugar

  4. Simmer the mixture until heated through and flavors are well combined

  5. Stir in lime juice and remove from heat before using as taco filling

Tips

  1. Lentils are hearty, protein-packed, and rich in iron; pairing them with tomatoes and lime juice improves iron absorption due to their vitamin C content

  2. This makes a great meatless alternative for tacos and can be used for Meatless Monday or plant-based diets
