Lentil Walnut Taco Meat

Ingredients

  • 1/2 large onion
  • 4-5 cloves garlic
  • 1 cup crushed walnuts
  • 2 cans of lentils
  • 300g mushrooms
  • 1/3 cup tomato sauce
  • 1.5 tbsp soy sauce (or sub 3/4 tsp salt for soy free)
  • 4 tbsp taco seasoning
  • Handful of chopped cilantro
  • Juice of 1/2 a lime

Preparation

  1. Sauté the diced onion until translucent, then add the garlic and mushrooms and cook for a few more minutes.

  2. Add the remaining ingredients and mix well.

  3. Once everything is heated through and combined, add the chopped cilantro and fresh lime juice.

  1. Serve with tacos, burritos, burrito bowls and more.
