Vegan Jackfruit Tacos with Spicy Fillings
Ingredients
- 1 yellow onion diced
- 2 large cloves garlic minced
- 1/8 teaspoon cloves
- 1/8 teaspoon cinnamon
- 1/2 teaspoon chili flakes
- 1/4 teaspoon cayenne
- 1 teaspoon smoked paprika
- 1/2 tablespoon cumin
- 1 teaspoon chili powder
- 1/4 cup tamari
- 3 tablespoons maple syrup
- 2 tablespoons tomato paste
- 1/4 cup veggie stock
- black pepper
- jackfruit (quantity not specified)
Additional fillings
- roasted spicy cauliflower
- tofu
- greens
- avocado
- sprouts
- pickled red cabbage
Preparation
Drain and rinse jackfruit
Remove hard core and pull jackfruit apart with your hands
Saute onion and garlic
In a small bowl combine all dry spices and toss in with onion and garlic
Add jackfruit and toss to combine
In a small bowl combine tomato paste, tamari, liquid smoke, and maple syrup, whisk to combine and add to pan
Stir
Add in stock, salt and pepper and mix thoroughly
Cover and reduce to medium low for approximately 30-40 minutes
Taste for seasoning
Taco assembly
Warm tortillas in a dry skillet or microwave
Fill tortillas with braised jackfruit and additional fillings like roasted spicy cauliflower, tofu, greens, avocado, sprouts, and pickled red cabbage
Serve immediately
