Vegan Protein Banana Bread

Ingredients

  • 3 medium bananas
  • 1/2 cup maple syrup
  • 1/4 cup plant based milk (i used soy protein)
  • 1/4 cup peanut butter
  • 2 flax eggs
  • 1 cup glutenfree flour (or sifted organic spelt)
  • 2 scoops plant based protein
  • 1/2 cup almond meal
  • 1.5 tsp baking powder
  • 1 cup diced strawberries

Preparation

  1. Preheat oven to 180 degrees fan forced

  2. To make the flax ‘eggs’ combine 2 tbsp flax meal with 6 tbsp water and set aside for 2 minutes (this is for 2 eggs)

  3. Use a hand mixer to combine the bananas, maple syrup, milk, peanut butter and the flax eggs

  4. Add the flour, protein powder, almond meal and baking powder and combine well

  5. Gently stir through the diced strawberries

  6. Spray and line a baking tin, pour batter into the tin and bake for approx 35-40mins. The banana bread should be slightly brown on top. Use a toothpick or equivalent to check that it is cooked through

  7. Allow to sit on the bench for 10 minutes before removing from tin.

  8. Slice and enjoy!
