Coconut Banana Bread with Cherries

Ingredients

  • 1 cup rice flour
  • 1/2 cup tiger nut flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 tablespoon arrowroot powder
  • 1 teaspoon Himalayan salt
  • 2 ripe large bananas (1 cup)
  • 1/2 cup coconut oil (melted)
  • 1/3 cup organic coconut sugar
  • 1/3 cup erythritol
  • 2 chia eggs (2 tablespoons chia seeds and 8 tablespoons water)
  • 1/4 cup cashew milk
  • 2 teaspoons vanilla essence
  • 1/2 cup shredded coconut
  • 1/2 cup de-pitted ripe cherries

Preparation

  1. Preheat the oven to 180 degrees C.

  2. Line a loaf tin with parchment paper and grease with coconut oil.

  3. Mix together all dry ingredients and set aside.

  4. Mash the bananas really well.

  5. Add the coconut oil and mix together until well combined.

  6. Add the sugar and mix really well.

  7. Add the chia eggs, vanilla essence, and cashew milk, and continue to mix until the consistency is quite even with no lumps.

  8. Add the shredded coconut and mix it in until evenly combined but not over mixed.

  9. Add in the dry ingredients and combine them really well until there are no lumps.

  10. Mix in the cherries lightly.

  11. Pour the batter into the prepared loaf tin

  12. Bake in the preheated oven for 35 minutes.

  13. Sprinkle the bread with 2 tablespoons of shredded coconut.

  14. Continue baking for 5-10 more minutes until a skewer inserted comes out clean.
