Banana Bread with Apricots

Ingredients

  • 1 cup regular flour
  • 1/2 cup fine ground almonds
  • 1/2 cup rice flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 Tbs arrow root powder
  • 3 medium ripe bananas
  • 1 tsp salt
  • 1/2 cup rapeseed oil
  • 1/3 cup coconut sugar
  • 1/3 cup erythritol
  • 2 chia eggs
  • 2 tsp vanilla extract
  • 2 cups fresh apricots
  • 1/2 cup toasted nuts
  • 4 Tbs shredded coconut

Preparation

  1. Whisk together 8 tablespoons of water and 2 tablespoons of chia seeds to make chia eggs; set aside for 10 minutes.

  2. Preheat the oven to 180°C

  3. In a large bowl, combine the dry ingredients: 1 cup regular flour, 1/2 cup ground almonds, 1/2 cup rice flour, 1 tsp baking soda, 2 tsp baking powder, 1 tbsp arrowroot powder, and 1 tsp salt

  4. In another bowl, mash 3 ripe bananas and mix with 1/2 cup rapeseed oil, 1/3 cup coconut sugar, 1/3 cup erythritol, 2 tsp vanilla extract, and the prepared chia eggs

  5. Combine the wet and dry mixtures until just combined

  6. Fold in 2 cups of chopped fresh apricots and 1/2 cup toasted nuts

  7. Pour the batter into a greased loaf pan

  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean

  9. Allow to cool before slicing
