Banana Bread with Apricots
Ingredients
- 1 cup regular flour
- 1/2 cup fine ground almonds
- 1/2 cup rice flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1 Tbs arrow root powder
- 3 medium ripe bananas
- 1 tsp salt
- 1/2 cup rapeseed oil
- 1/3 cup coconut sugar
- 1/3 cup erythritol
- 2 chia eggs
- 2 tsp vanilla extract
- 2 cups fresh apricots
- 1/2 cup toasted nuts
- 4 Tbs shredded coconut
Preparation
Whisk together 8 tablespoons of water and 2 tablespoons of chia seeds to make chia eggs; set aside for 10 minutes.
Preheat the oven to 180°C
In a large bowl, combine the dry ingredients: 1 cup regular flour, 1/2 cup ground almonds, 1/2 cup rice flour, 1 tsp baking soda, 2 tsp baking powder, 1 tbsp arrowroot powder, and 1 tsp salt
In another bowl, mash 3 ripe bananas and mix with 1/2 cup rapeseed oil, 1/3 cup coconut sugar, 1/3 cup erythritol, 2 tsp vanilla extract, and the prepared chia eggs
Combine the wet and dry mixtures until just combined
Fold in 2 cups of chopped fresh apricots and 1/2 cup toasted nuts
Pour the batter into a greased loaf pan
Bake for 50-60 minutes or until a toothpick inserted comes out clean
Allow to cool before slicing
