Chocolate Chip Walnut Banana Bread
Ingredients
- 2 tbsp ground flaxseed
- 4 tbsp water
- 3 ripe bananas
- 1/4 cup natural peanut butter
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1/4 cup brown sugar
- 1/2 tsp ground cardamom or cinnamon
- 1 tsp baking soda
- 2 tsp baking powder
- 2 cups spelt flour
- 1/2 tsp salt
- 1/2 cup walnuts
- 1/3 cup chocolate chips
Preparation
Preheat oven to 350F.
In a medium sized mixing bowl combine ground flaxseed and water, stir and let sit for 5 minutes.
Once flax seeds gel up, add ripe bananas and mash with a fork or whisk until mostly smooth.
Add peanut butter, apple cider vinegar, cardamom or cinnamon, vanilla and brown sugar and mix well.
Add baking soda and baking powder and whisk together to evenly combine.
Add flour 1/2 cup at a time and mix into batter until all incorporated.
Add walnuts and chocolate chips and fold them into the batter.
Spoon batter into a lightly greased loaf pan and bake for 50-55 minutes until a toothpick comes out clean.
Tips
Walnuts can be swapped for hazelnuts to give a Nutella-like flavor with the chocolate chips.
Flour can be substituted with all-purpose flour, 1-to-1 gluten-free flour mix, 1 cup oat flour with 1 cup rice flour, or whole wheat pastry flour.
