Mini Vegan Ice Cream Sandwiches

Ingredients

  • 3/4 cup oats
  • 1 1/4 cups almond flour
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 2 medium super ripe bananas
  • 1/2 cup applesauce
  • 1.5 tablespoons ground flaxseed
  • 4 tablespoons water
  • 1/4 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup crushed walnuts
  • Trader Joe's non-dairy vanilla frozen dessert (as needed)

Preparation

  1. Preheat oven to 360°F and line a baking sheet with a silicone mat.

  2. Prepare the flax egg and let it sit for 10 minutes.

  3. In one bowl mix the dry ingredients including flours, baking soda, and salt.

  4. In another bowl, mash the banana and stir in the sugar, vanilla, and flax egg.

  5. Add the wet ingredients to the dry, then fold in the chocolate and walnuts.

  6. Use a 1 tablespoon measure to form 15 cookies on the baking sheet, flattening a bit.

  7. Bake for 30 minutes until golden on top, then let cool for 15 minutes.

  8. Assemble the mini ice cream sandwiches by placing the non-dairy vanilla frozen dessert between two cooled cookies.
