Fudgy Hazelnut Chocolate Cookies
Ingredients
- 1 flax egg (1 tablespoon flaxseed + 2.5 tablespoons warm water)
- 1/2 cup room temperature coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup cacao powder
- 3/4 cup superfine almond flour
- 1/3 cup coconut sugar
- 1/2 cup chopped raw hazelnuts
- 1/2 cup chocolate chips
- Maldon salt for sprinkling
Preparation
Preheat oven to 350°F.
Make flax egg.
Beat sugar and coconut oil together using a small spatula.
Add flax egg and stir.
Add all the other ingredients, folding in well to combine.
Use an ice cream scoop to scoop dough and form fudgey cookies with hands.
Sprinkle with Maldon salt.
Bake for 15 minutes.
Allow to cool and enjoy.
