Vegan Banana Bread Blondies

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup maple syrup
  • 6 Tbsp peanut butter
  • 1/4 cup plant milk
  • 1 1/2 cups spelt flour
  • a pinch of salt
  • 1 Tbsp baking powder
  • 1/4 cup chocolate chips

Preparation

  1. Preheat oven to 175°C or 350°F

  2. Mix the mashed bananas, maple syrup, peanut butter, and plant milk in a bowl

  3. In another bowl, combine the spelt flour, salt, and baking powder

  4. Add the dry ingredients to the wet mixture and stir until combined, then fold in the chocolate chips

  5. Pour the batter into a greased baking dish and bake for 20-25 minutes
