Banana Bread Skillet

Ingredients

  • 1/4 cup soft coconut oil (not fully melted)
  • 1 cup pure cane sugar
  • 1 large egg
  • 3 medium ripe bananas
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • pinch of salt
  • 1/2 cup dark chocolate chips to be mixed in
  • 1/4 cup dark mini chocolate chips for the top

Preparation

  1. Preheat oven 350F and grease cast iron with butter

  2. Mix the coconut oil and sugar until crumbly

  3. Add in the egg, bananas, and vanilla

  4. In a separate bowl, whisk flour, baking soda, and salt - then bring together and fold in chocolate chips

  5. Transfer to cast-iron and sprinkle with the mini chocolate chips

  6. Bake for about 25-27 minutes
